Easy Bites

A Saudi brand of freeze-dried fruit, vegetable and yoghurt snacks. Freeze-drying pulls the water out without high heat, so colour, taste and crunch survive — which is why these are used to decorate cake and chocolate as well as eaten as a snack.

• Country: Saudi Arabia
• Manufacturer: Future Harvest for Food Industries, Riyadh
• Specialty: freeze-dried fruit, vegetable and yoghurt snacks

What does freeze-dried mean?

The fruit is frozen, then its water is drawn off under vacuum without high heat, so colour, taste and crunch remain.

Can it be used to decorate cake and chocolate?

Yes, and that is one of its main uses: it releases no water, so it will not seize chocolate or soak cream.

Does it need refrigeration?

No. Keep it dry and tightly closed — moisture is what costs it the crunch.
